I think I've figure out the bread issues I've been having. I thought I just wasn't going to get a good rise in the winter but I filled up a bowl with really bit water twice during the first rise and it was the best rise I've gotten so far. I'm crossing my fingers it works for the second rise. I was so encouraged that instead of only dividing it in two I did two loaves and two baguettes, that I'm letting rise in the new baguette baking rack I bought. I'll have to see how it turns out in the morning.
